Ingredients:
4 salmon fillets
1/4 cup butter
3 tablespoons Dijon mustard
1/4 cup dry breadcrumbs
1 1/2 tablespoons honey
1/4 cup walnuts finely chopped
4 teaspoons fresh parsley chopped
1 lemon cut into wedges
Salt and Pepper to taste
Preparation
Preheat your oven to 400 F. Line a shallow roasting pan with non-stick aluminum foi.
In small bowl, blend the mustard, butter, and honey and set aside. In another bowl, mix together the walnuts, bread crumbs and parsley.
Place the salmon fillets on the prepared pan and sprinkle with salt and pepper. Then brush with the mustard/honey mixture. Sprinkle the tops with the walnut/breadcrumbs mixture. Press the leftover into the sides of salmon.
Place in the oven and bake for about 12 minutes until it flakes easily with a fork.
Serve with lemon wedges.
