Mexican Skillet Pasta

Ingredients:

2 tablespoon olive oil
1 pound ground beef
15 ounces tomato sauce
2 cups salsa
2 cups uncooked elbows pasta
1 cup corn
1/2 cup water
1 cup canned black beans  rinsed
1/2 cup shredded cheddar cheese
1/4 cup parmesan cheese grated
1 avocado diced

Preparation


Heat olive oil in a saucepan over medium high heat
Add ground beef and cook for 5 minutes until browned making sure to crumble the beef as it cooks
Drain grease off
Add the salsa, the tomato sauce and the water
Mix until well combined
Add pasta corn and black beans
Reduce heat, cover and simmer for 15 minutes or until macaroni is tender
Sprinkle with cheese, replace cover and let stand until cheese is melted.

Serve immediately, topped with avocado
